My brother has a trucking company and periodically whatever his drivers are hauling will get “rejected”, meaning that the recipient won’t take the product. This mainly happens with produce (tomatoes, potatoes, lettuce, etc) and lately cabbage! One driver had cabbage rejected 2 weeks in a row! I think one week he had 500 pounds and one week 1000 pounds rejected. That’s a lot of cabbage! Sometimes when places reject items, they have to be returned to the sender (or sent somewhere else), but often it’s up to the driver/trucking company to do something with the “rejects” (I’ll just make up my own terms haha) ;). Most times you don’t even know why the produce gets rejected. It looks and tastes as fresh as anything you’d buy in the grocery store, so it’s hard to let that go to waste! My brother usually tries to give the rejects away, either to friends and family, food banks, local produce stands, etc.
But long story short, I’ve been eating A LOT of cabbage. I don’t mind! I love cabbage pretty much any way you fix it, and I especially love a good cabbage salad. This Asian Shredded Chicken Salad might be my new favorite – quick and easy, crunchy, full of flavor, low in calories, and high in protein. It checks all the boxes. Enjoy!
Asian Shredded Chicken Salad
~3 oz shredded cooked chicken breast
~2 cups shredded cabbage
1/2 cup sugar snap peas, cut in half
1 medium carrot, grated
sesame seeds or chopped peanuts (optional)
for the vinaigrette:
2 tbsp powdered peanut butter (I use PB2)
2 tbsp unseasoned rice vinegar
1-1/2 tbsp reduced sodium soy sauce
1 tsp sesame oil
1/2 tbsp honey
1/4 tsp fish sauce
1/4 tsp ground ginger
1/4 tsp garlic powder
1. Place the shredded chicken, cabbage, sugar snap peas, and grated carrot in a large mixing bowl.
2. Combine all the ingredients for the vinaigrette in a separate bowl or measuring cup and whisk until well combined. Pour over the cabbage mixture and toss well. Sprinkle with sesame seeds or chopped peanuts.
3. Serve immediately, or refrigerate for about an hour to allow flavors to meld. Serves 1-2 depending on how hungry you are =).
