Since Titus has turned into a picky eater (😭), I’m trying all the tricks to get him to eat more variety. He won’t eat regular oatmeal, but he ate this baked oatmeal 2 days in a row! He may not eat it ever again, but I’m calling it a win! 😂It does have maple syrup, but I wouldn’t say it’s “sweet”. It has a hint of sweetness (which was enough for me and Titus),  but you could drizzle with maple syrup when serving if you like. Leftovers are great too. Easy, delicious, and toddler approved! What more could you ask for?? Enjoy!

Baked Oatmeal

1 and 3/4 cups  milk
2 large eggs
1/2 cup pure maple syrup
3 tablespoons unsalted butter, melted and slightly cooled
3 cups old-fashioned whole oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/4 teaspoon salt
(Optional) 1 and 1/2 cups mixed berries, fresh or frozen (do not thaw)

1. Preheat the oven to 350°F. Spray a 9×9 inch baking pan with nonstick spray.
2. Whisk all of the ingredients together in 1 large bowl. Pour into prepared baking pan.
3. Bake for 35 minutes or until the center has set.  Cool for 5 minutes before serving. Cover leftovers tightly and refrigerate for up to 1 week.
