You’ve probably had cream cheese mints at a baby shower, bridal shower, or maybe a wedding. They are melt-in-your-mouth and a great way to end any celebration, in my opinion. I made them for our gender reveal, but am just now getting around to posting the recipe….only 3 months later #fail. Oh well, better late than never right?? They couldn’t be easier – only 3 ingredients – and you can make them weeks in advance (a HUGE perk when you’re party prepping!). I left these white, but I made blue and pink for our gender reveal. A few drops of gel food coloring and you can easily customize to your event/theme. Give them a try! I know you’ll love them. Enjoy!
Cream Cheese Mints
8 oz package cream cheese
2 lbs powdered sugar
1/4 to 1-1/2 tsp peppermint extract (Start with 1/4 tsp and add more to taste. I like mine minty and use 1-1/2 tsp)
food coloring (optional)
granulated sugar (for rolling)
1. In bowl of stand mixer with paddle attachment, beat cream cheese and powdered sugar until smooth and combined. Mixture will be dry.
2. Add peppermint extract, 1/4 tsp at a time, until you reach your desired flavor. Mixing on low after each addition. Add food coloring, if desired.
3. Using a measuring teaspoon (or small scoop), roll mixture into balls. Roll each ball in granulated sugar.
4. Place on wax paper and flatten slightly with fork. (Or you can press into molds.)
5. Allow to chill in the fridge uncovered for a couple hours to dry. Store in covered container in the fridge or freeze if keeping longer than a couple weeks.
