I hesitated to post this because it’s not really a “recipe”, but then I remembered how good it was and decided I had to post it anyway! =) Since I got back from Puerto Rico, I’ve been eating more avocado than ever! Like seriously, I rarely ate avocado before and now I’m buying a couple avocados a week. I had something similar to this toast for breakfast one morning in Puerto Rico. I loved it so much, I ordered it again a few days later. You know it’s good when you get a repeat on vacation! As I was editing pictures from the trip, I kept thinking about that avocado toast and decided I needed to try and create a copycat version. This is what I came up with. Is it exactly like what I had in Puerto Rico? No, not exactly, but it’s pretty darn close! And the kind of breakfast you wake up excited about! I still can’t decide what makes this toast so good, but when all the ingredients come together something magical happens and you’ll be sad when you take the last bite…haha! The Best Avocado Toast EVER!
1 slice sourdough bread
~1 tbsp garlic and herb goat cheese (or cream cheese if goat cheese isn’t your thing)
1.5 oz mashed avocado (~1/3 of a medium avocado)
sliced smoked salmon
1 egg
arugula
salt
pepper
1. Preheat oven to broil and place bread in oven to toast (or use toaster). While bread is toasting, cook the egg.
2. In large nonstick skillet over medium heat, fry egg as desired. I prefer mine over hard…I know, very uncool. Haha!
3. Place toasted bread on plate. Spread goat cheese over toast. Add mashed avocado, salmon, and arugula. Top with fried egg. Season with salt and pepper to taste.
