It’s the most wonderful time of the year! 😉 The garden produce has started coming in! This week: potatoes, parsnips, turnips, rutabaga, lettuce, cucumbers, green beans, and more! I love fresh produce. Seriously, I don’t think there is a vegetable that I don’t like, but parsnips are one of my favorites! They remind me of carrots, but they definitely have a flavor all their own. They also make delicious “fries” – slightly sweet and healthier than traditional french fries. No, they do not taste exactly like potato french fries, but they are delicious in their own right! I like to cut mine into shoestring fries so there are more crispy edges, but feel free to cut your “fries” into whatever size you like. Enjoy!

Baked Parsnip Fries

8 oz parsnips, cut into shoestring “fries”
1/2 tbsp olive oil
salt
pepper
cayenne pepper (optional)

1. Preheat oven to 450 degrees. Spray baking sheet with nonstick spray. Toss parsnips and olive oil in large bowl until evenly coated.
2. Spread onto prepared baking sheet in an even layer. Season with salt and pepper. Add a dash of cayenne if desired. Bake in preheated oven for 15-20 minutes or until golden brown and crispy, stirring after 10 minutes.
Serves 2.
