You guys, somehow I have mono at 29 years old! Like seriously, who waits until they are 29 to get mono?!? This is supposed to be a disease of teenagers and it’s terrible….ugh! I’m almost 2 weeks in and I’m finally starting to feel some better (praise the LORD!), but it was touch and go there for a few days (haha jk jk!). The sore throat from mono is NO JOKE though. I lived on kale smoothies for dayyys. This cauliflower fried “rice” was one of the first meals I fixed myself as I was transitioning back to “real” food ;), and it was so good I decided it was worth the effort to snap a quick photo for the blog! Not only is it delicious, but it literally comes together in 15 minutes and is super healthy! And it’s just as good on the second day! #winning It’s pretty much the perfect weeknight meal. Enjoy!
Cauliflower Fried “Rice”
16 oz riced cauliflower (I used a blend of cauliflower, broccoli, carrot, and onion – THIS one; any riced cauliflower will work though – store-bought or homemade)
2 egg whites
1 egg
1 tsp sesame oil
1/2 tsp garlic powder
1 tbsp low sodium soy sauce
1 tbsp hoisin sauce
1 boneless skinless chicken breast, chopped
1. Heat large nonstick skillet over medium high heat. Spray with nonstick spray. Add eggs and egg whites to skillet. Cook, turning once until fully cooked. Chop, remove from skillet, and set aside.
2. Wipe skillet out with paper towel if necessary. Spray skillet again with nonstick spray. Add chicken to hot skillet and cook until golden brown and cooked through. Remove from skillet and set aside.
3. Add sesame oil to skillet. Add cauliflower, garlic, and soy sauce to skillet. Cook 3-4 minutes or until cauliflower is tender and softened (but NOT mushy!). Add cooked eggs and chicken back to skillet. Stir in hoisin sauce. Serves 2-3.
Nutritional Info (per 1/3rd): 177 calories; 5 g fat; 11 g carbohydrates; 4 g fiber; 24 g protein.
Just trying to think of something good and quick to do with the cauliflower in my fridge. What’s for supper tonight?? This I think! 🙂
