Pecan pie used to be my favorite dessert. I say used to be, because now I don’t really have a favorite dessert. I still like pecan pie, but I have other favorites too like Chocolate Chip Walnut Cookies, Banana Pudding Cheesecake, Strawberry Rhubarb Crisp, and Lemon Bars (just to name a few!!). However, when I saw this recipe for Pecan Pie Bars I had to give it a try! These bars are the perfect (easy) way to satisfy your pie craving. They’re sort of a cross between pecan pie and a blonde brownie…so good!! Enjoy!
Chewy Pecan Pie Bars
for the crust:
1 box yellow cake mix (just the dry mix, reserve 3/4 cup for filling)
1 stick butter, softened
1 egg
for the topping:
3/4 cup yellow cake mix (reserved from crust)
1/2 cup light brown sugar, packed
1-1/2 cup corn syrup
1 tsp vanilla extract
1 tsp cinnamon
3 eggs
1-1/2 cup chopped pecans
1. Preheat the oven to 350°F, spray 9×13 baking dish with nonstick spray and line bottom with parchment paper.
2. For the crust layer: Set aside 3/4 cup yellow cake mix for the filling, then pour the rest into a large mixing bowl. Add the butter and egg, beating with an electric mixer until well combined. Press the dough into the bottom of the baking dish, and bake for 17-20 minutes, or until the dough is lightly golden.
2. For the pecan pie topping: In a large bowl, combine remaining cake mix, brown sugar, corn syrup, vanilla, cinnamon and eggs. Beat for about 1-2 minutes to fully combine the ingredients. Pour this mixture over the baked crust. Sprinkle with pecans. Bake for 30-35 minutes, or until the filling has set (if you move the pan, the center shouldn’t jiggle). Cool before serving.
