It’s strawberry season! My parents gave me a bunch of beautiful, perfectly sweet, organic strawberries. I ate most of them straight out of the fridge, but I used the remaining few in these Strawberry Crumb Bars. I’m a sucker for anything with a crumb topping, so when I spotted this recipe I knew I had to try it. So good!! The crumb topping is buttery, tastes almost like shortbread cookies, and pairs perfectly with the strawberry filling. No fancy ingredients. No fancy techniques. Strawberry Crumb Bars
1/2 cup white sugar
1/2 tsp baking powder
1-1/2 cups all-purpose flour
1/4 tsp salt
1/2 cup butter
1 egg, beaten
1 tsp vanilla
2 cups chopped fresh strawberries
1/3 cup white sugar
2 tsp cornstarch
1. Preheat the oven to 375 degrees. Spray 8 inch square baking dish with nonstick spray.
2. In a medium bowl, stir together white sugar, flour, baking powder and salt. Add egg and vanilla. Using a pastry cutter, cut the butter into the flour mixture. Work with the dough until the pieces are very small. Dough will be crumbly. Pat half of the dough evenly into the bottom of the prepared pan.
3. In another bowl, stir together the sugar, cornstarch, and strawberries. Spoon the strawberry mixture evenly over the bottom crust. Crumble the remaining dough over the strawberry filling layer.
4. Bake in a preheated oven for 45 minutes, or until top is slightly golden brown. Cool completely before cutting into squares.
