Raise your hand if you secretly love box-mix brownies. I know I’m not the only one! 😉 Box-mix brownies are just so easy and perfectly chewy. Not all box-mixes are created equal though. I happen to a huge fan of Ghirardelli. Up until now, I hadn’t found a homemade brownie recipe that was as chewy as my beloved box-mix…but this one comes pretty darn close! And it’s almost as easy as a box-mix – one bowl, no fancy ingredients, and you don’t even have to melt any chocolate. Enjoy!
Chewy Double Chocolate Brownies {Box Mix Style}
1 stick butter, melted
2 tbsp canola oil
1-1/2 cups granulated sugar
2 eggs
1 tsp vanilla
1 tsp instant espresso powder
1/2 cup all-purpose flour
1 cup unsweetened cocoa powder
1/4 tsp salt
1 tsp baking powder
1 cup mini semi-sweet chocolate chips
1. Preheat oven to 325 degrees. Spray 10 inch square baking dish with nonstick spray.
2. In large mixing bowl, stir together butter, oil, and sugar until well mixed. Add eggs, vanilla, and espresso powder and beat thoroughly combined.
3. Stir in flour, cocoa, salt, baking powder, and chocolate chips until smooth. Batter will be thick!
4. Pour into prepared pan and bake in preheated oven for 30-35 minutes or center is almost set. (Be careful not to overbake. You want the edges to be set but the center to still be somewhat “gooey”. It will set upon cooling.)
