Last weekend, I rediscovered several bags of wheat berries in my pantry and made Wheat Berry Waffles. I had leftover Panko Crusted Baked Chicken Nuggets in the fridge from the night before and thought it would be delicious to reheat a few of my chicken nuggets and have Chicken and Waffle Bites! Best. Idea. Ever. Now I know why everyone loves chicken and waffles. =) The flavors are so complimentary! I made several miniature waffles by pouring a tablespoon of batter at a time into the waffle iron, but you could easily just cut the waffles into pieces after they are cooked. These would be perfect for brunch, and both the chicken and the waffles can be made ahead reheated prior to serving. You definitely want to give these a try! Enjoy!
Chicken and Waffle Bites
1 batch panko crusted baked chicken nuggets
1 batch wheat berry waffles
1. Make waffle “bites” by cooking ~1 tbsp of batter into the waffle iron at a time or cutting full size waffles into bite-sized pieces.
2. Sandwich chicken between two pieces of waffle. Secure with toothpick (optional). Top with maple syrup and hot sauce, if desired. Serve warm.
Notes:
1. Waffles can be made ahead and frozen. To reheat, place frozen waffles on baking sheet and toast until warm and crispy. (Or use a toaster).
2. Fully cooked chicken nuggets can be frozen in ziploc bag. To reheat, place frozen nuggets on baking sheet. Bake at 350 degrees for 15-20 minutes or until crispy and heated through.
