I picked up some green curry paste on a whim. Then, I scoured the internet looking for an easy, healthy recipe for green curry chicken. There are thousands! After wasting wayyy too long, I finally decided that I wasn’t going to find the “perfect” recipe, mostly because I had no idea what exactly I was looking for ;)! I combined lots of different recipes to come up with what you see here and it turned out great. Most recipes I saw started with curry paste, coconut milk, chicken, and fish sauce so that was my starting point too. I chose lite coconut milk to save some calories (and because I find full-fat coconut milk to be ridiculously rich). I added some chopped fresh spinach and mushrooms, since that’s what I had on hand, and instead of rice I served mine over zoodles. Although, I think it would be delicious over rice too! The entire recipe comes together in 20 minutes, but you get great depth of flavor from the curry paste. Give it a try and let me know what you think! Enjoy!
Healthy Thai Green Chicken Curry
1/2 tbsp extra virgin olive oil
4-5 tbsp green curry paste
1-1/2 pounds boneless skinless chicken tenders, chopped into bite-sized pieces
13 oz can lite coconut milk
1/2 cup low-sodium chicken stock
1-2 tbsp fish sauce (to taste)
2 cups fresh spinach, chopped
~1 cup sliced mushrooms
~2 tbsp chopped fresh basil
2 medium zucchini, spiralized into “zoodles”
1. Heat olive oil in large pot over medium-high heat. Add curry paste and cook until fragrant, about a minute. Add chicken and stir until coated.
2. Add coconut milk, fish sauce, and chicken stock. Bring to boil. Add mushrooms. Cover and reduce to simmer. Simmer about 10 minutes or until slightly thickened and chicken is cooked through. Stir in spinach and basil.
3. Serve immediately over zoodles (or rice). (I did not cook my zoodles. I placed the raw zoodles in each individual bowl and topped them with the hot chicken mixture. The mixture is hot enough that they will soften slightly.) Serves 4 (large servings).
Nutritional Info (per 1/4th, including zoodles): 295 calories; 10.8 g fat; 10.4 g carbohydrates; 2.6 g fiber; 39.1 g protein.
