Now that it’s January and we’ve ate all the cookies, how about a healthy chicken dinner? This recipe is full of flavor with only a few ingredients. You can use whatever flavor hummus you want. I’d recommend Sabra’s Supremely Spicy Hummus, but if you don’t like spicy you could try roasted red pepper (or even homemade). The hummus not only adds a ton of flavor, but also keeps the chicken juicy. The lemon juice and cilantro add freshness and another layer of flavor. It’s a great, healthy, weeknight meal! Hummus Coated Baked Chicken Breasts
2 large or 4 small boneless, skinless chicken breasts (~1.5 pounds total)
~1/3 cup fresh chopped cilantro
juice of 1/2 lemon
1/2-3/4 cup Sabra’s Supremely Spicy hummus (or hummus of choice)
salt
pepper
paprika
1. Preheat oven to 450 degrees. Spray 9×13 glass baking dish with nonstick spray.
2. If using 2 large chicken breasts, butterfly the chicken breasts and cut each breast into 2 pieces. (4 pieces total) Place in prepared baking dish. Squeeze 1/2 a lemon over chicken breasts. Season with salt and pepper. Sprinkle with 2-3 tablespoons chopped cilantro.
3. Top each chicken piece with 2-3 tablespoons hummus. Sprinkle with paprika. Bake in preheated oven for 20-25 minutes or until chicken reaches ~160 degrees. Turn oven to broil and broil for 2-3 minutes or until hummus is slightly crisp. (You want a final internal temperature of 165 degrees. Bake time may vary slightly depending on the thickness of your chicken breasts.) Remove from oven and top with remaining chopped cilantro.
