Sometimes you just need chocolate. I’d been craving chocolate for days before I finally gave in and made these muffins. I wanted needed chocolate but I didn’t want to completely negate my 3 mile run and 35 minutes of strength training earlier that day. These muffins were the perfect solution. They’ll definitely satisfy your chocolate craving for only 42 calories (less if you skip the chocolate chips!), and they have no wheat flour, no butter/oil, and less refined sugar so you don’t need to feel guilty about eating them! You can eat them for dessert, breakfast, snack-time, or anytime ;). If you’re eating them for breakfast, I’d probably skip the chocolate chips….but Jordan said, “No way!”. Your call. Enjoy!
Skinny Mini Chocolate Fudge Banana Muffins
1 egg
1/4 cup brown sugar
1/3 cup unsweetened applesauce
1 tsp vanilla
1 cup mashed very ripe bananas (~3 bananas)
1 cup oat flour *see note below
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp espresso powder
1/4 cup Hershey’s Special Dark cocoa powder
1/4 cup mini semi-sweet chocolate chips
1. Preheat oven to 350 degrees. Grease mini muffin tin (30 cups) with nonstick spray.
2. In large bowl, whisk together the oat flour, brown sugar, baking soda, baking powder, salt, espresso powder, and cocoa powder. In separate bowl, combine mashed banana, egg, vanilla, and applesauce. Add to dry ingredients and stir just until combined.
3. Divide batter among prepared muffin cups. Sprinkle tops with mini chocolate chips.
4. Bake in preheated oven for 8-10 minutes. Makes 30.
Note: I never have oat flour on hand, so I take about 1 cup + 2 tbsp quick oats and pulse them in the blender or food processor until finely ground. You need 1 cup after you grind your oats.
