I made pumpkin biscuits last weekend. They were good, but I was hangry! by the time I sat down to eat and didn’t get any pictures – maybe next time. I was left with an opened can of pumpkin in the fridge and decided to add some to my smoothie the next morning. It’s one of my new favorite ways to eat pumpkin for sure! I added half a frozen banana for creaminess and natural sweetness, along with a scoop of my favorite vanilla protein powder. If you don’t like protein powder, you could try adding some yogurt instead. I didn’t go crazy with the pumpkin pie spice here, but you could certainly add more if you prefer. I love healthy, protein-packed breakfasts (or snacks!) that taste this good – almost like drinking a milkshake. Enjoy!

Pumpkin Spice Protein Smoothie

1 scoop vanilla chai protein powder*
1/2 banana, frozen
1/4 cup pumpkin puree
1/3 cup skim milk*
1 tsp vanilla extract
1/4 tsp pumpkin pie spice (or to taste)
1/2-3/4 cup crushed ice

Combine all ingredients in blender and process until smooth. Serves 1.

Notes:
1. You can use any vanilla protein powder you enjoy. I love Fitmiss Vanilla Chai.
2. If you don’t like protein powder, you could substitute vanilla greek yogurt. I’d start with ~1/2 cup.
3. Use any milk you prefer.
