We’ve been eating a lot of shrimp this summer. Jordan and I both love shrimp and it’s perfect for quick, weeknight dinners because it only takes a couple minutes to cook. Bonus points for being a great source of lean protein! These shrimp tacos couldn’t be easier. It looks like a long ingredient list, but it’s because almost all the ingredients are listed twice – once for the sauce, and once for the marinade. The shrimp only need 20-30 minutes in the marinade and only a couple minutes on the grill. The sauce comes together in 5-10 minutes – basically however long it takes you to chop the jalapeño – and it’s kind of the star of the dish. It’s creamy and spicy and full of flavor! I could eat it by the spoonful…if I had plenty of water ;). Don’t skip the cabbage. It provides a nice crunch. Purple cabbage would provide some nice color here, but I was lazy and bought pre-shredded. No judgement here. If you’re looking for quick and easy weeknight meals, give these tacos a try! Enjoy!

Easy Shrimp Tacos

for the shrimp marinade:
1 pound large or jumbo raw shrimp, peeled and deveined
2 tbsp lime juice
1/4 cup chopped fresh cilantro
1/4 tsp dried oregano
1/2 tsp ground cumin
1/4 tsp dried dill weed
1/8 tsp ground cayenne pepper (or to taste)
salt and pepper

for the sauce:
3/4 cup fat-free greek yogurt
1/4 cup light mayonnaise
2 tbsp lime juice
1 jalapeño pepper, minced (I removed the ribs and seeds)
1-1/2 tsp minced capers
1/2 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp dried dill weed
1/4 tsp ground cayenne pepper
salt to taste

corn tortillas
finely shredded cabbage

1. Combine all ingredients for sauce in small bowl and stir to combine. Refrigerate for a couple hours or overnight.
2. Combine marinade ingredients in bowl. Add shrimp and toss to coat. Refrigerate for 20-30 minutes.
3. Preheat grill pan (or outdoor grill). Remove shrimp from marinade and grill for 2-3 minutes or until cooked through.
4. Warm tortillas in dry skillet. Top with shredded cabbage, sauce, cooked shrimp, and fresh cilantro (optional). Serves 3.
