Easter is less than a week away and all the “good” food bloggers have been posting carrot cake all-the-things for weeks. I don’t have a carrot-cake-anything for you but I do have this delicious carrot banana smoothie. So that’s something right?? 😉
I eat a lot of carrots. As in, I buy 5 pound bags of baby carrots at Costco and I’m the only one who eats them. It’s a good thing carrots are healthy! I’d never thought to add them to a smoothie until I started seeing carrot cake smoothie recipes pop up on blogs and pinterest. Most of the recipes called for carrot juice (which I didn’t have), but I found a few recipes that used raw carrots. Since I always have baby carrots on hand, I decided to give it a try. I combined my carrots with half a banana, but I’m thinking pineapple or mango would be delicious too. Use whatever yellow/orange fruits you have on hand. (Of course, you could use any color fruit but if you use a red fruit like strawberries or raspberries you lose the beautiful orange color.)
I added a scoop of protein powder to my smoothie, but if you don’t like protein powder you could use greek yogurt instead. (If you use greek yogurt, you might need to add some vanilla and sweetener of choice.) Smoothies are super versatile and this recipe is no exception! I loved the combination of carrots, banana, coconut water, and vanilla. I think you will too, and it always feels good to start the day with a healthy breakfast. Enjoy!
Carrot Banana Smoothie
3-4 oz (~3/4 cup) raw baby carrots
1/2 medium banana, frozen
2/3 cup coconut water
3/4-1 cup crushed ice (or to taste)
1 scoop vanilla protein powder (I prefer Fitmiss Delight Vanilla Chai)
Combine all ingredients in blender and process until smooth. Serves 1.
