You guys, I didn’t even know they made Birthday Cake Oreos until last week!! How did I miss this?? Probably because I never buy Oreos…but if I’d known about Birthday Cake Oreos I would have made an exception ;). I was skeptical that they were just classic Oreos with sprinkles, but as soon as you open the package you can smell the “birthday cake” flavor! I had planned to make Oreo Blondies (that’s why I was buying Oreos in the first place), but when I spotted the Birthday Cake Oreos I thought Birthday Cake Oreo Blondies would be even better!
I started with my favorite chocolate chip cookie dough (minus the chocolate chips) and stirred in some crushed birthday cake oreos and lots of sprinkles. Not only are these blondies delicious and super cute + fun, but they’re also quick and easy! You won’t even need to use your mixer (although you can if you want) or wait for butter to soften or dough to chill. You can have these in the oven in 10 minutes. I love brownies (and blondies) of all kinds, but these are definitely one of my new favorites. My brother suggested topping with a scoop of vanilla ice cream. I don’t see how this could be bad. I think I’ll try one topped with ice cream too..for quality control, of course ;). Enjoy!
Birthday Cake Oreo Blondies
2 cups self-rising flour
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
20 Birthday Cake Oreos, crushed
1/4 cup + 1 tbsp mulit-colored sprinkles, divided
1. Preheat the oven to 350 degrees. Spray 9×13 pan with nonstick spray.
2. In a medium bowl, whisk together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy.
3. Mix in the flour until just blended. Stir in the crushed oreos and 1/4 cup sprinkles. Press into prepared pan. Top with remaining sprinkles and press lightly into dough.
4. Bake in preheated oven for 25-30 minutes or until edges are lightly browned and center is almost set.
