Did anyone make a new year’s resolution to eat healthier? Overall, I’m pretty happy with where I’m at with my nutrition right now. In the last year, I’ve really focused on eating cleaner and increasing my protein intake. I think I’ve finally found a sustainable balance for me. It’s certainly not perfect, as I still eat occasional Rainbow Chip Cupcakes ;), but the key being sustainable. You can do anything for a set length of time, but if you want something to stick it (generally) has to be a lifestyle change.
Eating a healthy dinner has never really been my problem. (My problem’s always been my sweet tooth and love of carbs.) As I was looking through the archives for this post I realized that most of my non-desserts recipes were generally healthy, some healthier than others. Here are 15 of my favorites (in no particular order) to help you get the year started off right! Enjoy!
{Healthier} Pumpkin Mac and Cheese – Comfort food, slimmed down.
{Quick and Easy} Spinach and Artichoke Pasta – One of the most popular recipes on the blog. I love anything with spinach and artichokes…and carbs ;).
Grilled Cilantro Lime Chicken – This cilantro sauce is a-mazing! I used an outdoor grill, but you could use an indoor grill pan during colder weather.
Quinoa Stuffed Acorn Squash – Squash stuffed with quinoa, spinach, goat cheese, and extra lean ground turkey…yum!
Baked Chipotle-Rubbed Chicken Legs – These chicken legs definitely bring the heat..but you can easily adjust the recipe to your family’s tastes. Jordan loves spicy foods.
Apple Pecan and Feta Salad with Honey Apple Vinaigrette – I love all salads, but this salad is one of my favorites.
Macadamia Nut Crusted Mahi Mahi – So easy, so delicious. I love macadamia nuts…and mahi mahi =).
Shaved Brussels Sprouts with Lemon Vinaigrette – While some might not consider this a meal by itself, I think it’s perfect for meatless Mondays (or any day!). Who says you can’t have dinner without meat??
Honey Balsamic Salmon with Peach Salsa – I love salmon and this peach salsa was amazing.
Chicken Lettuce Wraps – Sounds a little boring, but trust me. These lettuce wraps have tons of flavor.
Chicken Tortilla Soup – Soups are the perfect healthy dinner on cold winter nights. You can even make this one in the crockpot.
Spicy Black Bean Chili – Don’t let the old photo scare you away. I love this spin on traditional chili with black beans and chipotle peppers. Tons. Of. Flavor.
Honey Sriracha Chicken – I feel like spicy-everything is so popular right now. Jordan and I love this easy, sriracha chicken.
Sweet Potato and Broccoli Chicken Curry – A curry easy enough for a weeknight meal, but delicious enough for anytime!
Panko Crusted Baked Fish – The panko bread crumbs will give you all the crunch of fried fish but without all the calories!
