I try not to grocery shop while hungry, because if I do I’ll come home with lots of stuff I don’t need (and wouldn’t normally buy)! Like coming home with chex cereal, pretzels, peanuts, and white chocolate. Obviously I had no choice but to make this white chocolate peanut butter snack mix…obviously ;). There are lots of different versions of this snack mix around the web, but this is my favorite version. Jordan prefers it with M&Ms instead of popcorn, but since he wasn’t home I made it my way. I’m a good wife like that (haha!).
You can easily adjust the ingredients – or ratio of ingredients – to your tastes. Don’t like one of the ingredients? Swap it out for something different. Try cheerios, graham cracker pieces, rice krispies, other nuts, chopped candy bars, etc. You can even use your favorite nut butter instead of the peanut butter. The options are pretty much endless =). If you’re like me and opt out of the M&Ms, you’ll probably want to add sprinkles for some color. I used autumn colored sprinkles, but use whatever you have. This stuff is great for holiday gift-giving and is very festive if you use Christmas sprinkles (or red and green M&Ms). And you’ll definitely want to give most of it away so your skinny jeans will still fit =). Enjoy!
White Chocolate Peanut Butter Snack Mix
4 cups rice chex cereal
3 cups mini pretzels
4 cups air-popped popcorn
1 cup salted cocktail peanuts
16 oz vanilla candiquik or white chocolate chips
1/2 cup peanut butter
sprinkles (optional)
1. Combine chex cereal, pretzels, popcorn, and peanut in large bowl.
2. In microwave safe bowl, combine white chocolate and peanut butter. Microwave in one minute intervals, until chocolate is melted and mixture is smooth. Pour over cereal mixture and toss until evenly coated.
3. Pour mixture onto wax paper or parchment paper and top with sprinkles, if desired. Let sit at room temperature until chocolate/peanut butter mixture hardens. (If you’re in a hurry, you could place mixture in refrigerator so that it will harden faster.) Break into pieces and try not to eat it all at once ;).
