If you’re like me, your salad intake tends to rapidly decrease right about now. Summer veggies are nearly gone and cooler temperatures get me craving warm soups rather than cold salads. That being said, you can eat salads almost year round, but you probably want to change up your salad ingredients some depending on what’s in season. For instance, this salad has lots of fall flavors – cranberries, pecans, and apples. There’s nothing unique about that combination, but it’s the honey apple vinaigrette that steals the show with this salad. I love vinaigrettes, and you know what else I love?? Vinaigrettes with only 3 ingredients – even better! I’m loving quick and easy right now – start to finish in 15 minutes (or less!). You could eat this salad as a side dish, a meatless main dish, or top with some grilled chicken – if you’re like me and married to someone who doesn’t consider it a meal without meat ;). Apple Pecan and Feta Salad with Honey Apple Vinaigrette 

for the salad:
4 cups lettuce or greens of choice
1/2 apple, thinly sliced
2 tbsp dried cranberries
2 tbsp chopped pecans, toasted
2 tbsp feta cheese, crumbled

for the dressing:
1 tbsp honey
2 tbsp apple cider vinegar
1 tbsp extra virgin olive oil
salt and pepper, to taste

1. Place lettuce in large bowl. Top with apple slices, dried cranberries, pecans, and feta cheese.
2. In small bowl, whisk together honey, vinegar, and olive oil. Add salt and pepper to taste. Pour over lettuce mixture and toss to combine. (Depending on how much dressing you like, you may or may not want to use all the dressing.)
