I had some cilantro left after I made my Honey Balsamic Salmon with Peach Salsa. I didn’t want to let it go to waste, so I started looking for recipes with cilantro. I found a recipe for cilantro lime chicken that looked good and then remembered a recipe for cilantro cream sauce that I’d seen on The Girl Who Ate Everything. I decided to combine the two…best decision ever! 😉 The marinade is simple (the best kind of recipe!), and leaves the chicken so flavorful and juicy. The chicken is delicious without the cilantro cream sauce but the sauce really added another layer of flavor. If you have an extra minute (because that’s all it takes, literally!), I’d highly recommend giving it a try. I served mine over a brown rice medley from Trader Joe’s but if you’re trying to eat a little cleaner, the chicken plus the cream sauce is delicious all by itself or you could serve it over quinoa or even bulgur. And the cream sauce? Yeah, no cream involved, only greek yogurt so it’s still healthy and low calorie #winning! ;). I can’t say enough good things about this chicken. Give it a try this week! Grilled Cilantro-Lime Chicken

1-1/2 lb chicken breasts (or chicken tenders)
1/4 cup lime juice
1/2 cup chopped fresh cilantro
3/4 tsp garlic powder
1 tbsp honey
1 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper

1. In a small bowl (or ziploc bag), combine lime juice, cilantro, garlic, honey, olive oil, salt, and pepper. Add chicken and turn pieces to coat evenly.  (If your chicken breasts are really thick, you might want to pound them to an even thickness.) Cover and chill at least 4 hours or overnight.
2. Drain chicken. Grill until chicken reaches 160 degrees, flipping once. Remove from grill and let rest 5-10 minutes before serving.

Cilantro Sauce
1/2 cup 2% plain greek yogurt (or sour cream)
1/2 cup chopped fresh cilantro
2 tbsp lime juice
1/8 tsp garlic powder
salt, to taste
pepper, to taste

Combine all ingredients in food processor (or blender) and pulse until smooth.
