I saw a recipe for rice krispy treats with toasted marshmallows over at Cookies and Cups and knew I had to give it a try. Toasted marshmallows, huh? Why didn’t I think of that?!? I was curious to see if the “toasted” flavor would come through in the finished product and to my delight it did. You can actually taste the toasted flavor of the marshmallows! =) Despite sounding “fancier” than traditional rice krispy treats, the recipe is basically unchanged from the original. The only difference is that you toast (obviously) the marshmallows instead of melting them on top of the stove. You don’t need any fancy equipment to toast your marshmallows, just line a baking sheet with parchment paper and spread the marshmallow out in an even layer. Then, place under the broiler until melty and golden brown…yum! You can easily whip these rice krispy treats up in 10 minutes – start to finish! They’re the perfect summer snack. Enjoy!
Toasted Marshmallow Rice Krispy Treats
3 tbsp butter, melted
10 oz mini marshmallows
6 cups rice krispies cereal
2 tsp vanilla nut extract
1. Spray 9×13 baking dish with nonstick spray (or grease with butter).
2. In large bowl, melt butter in microwave (Alternately, you could melt in saucepan on stovetop.)
3. Preheat oven to broil. Line baking sheet with parchment paper. Spray with nonstick spray. Spread marshmallows in even layer on greased parchment paper. Place marshmallows under broiler for about a minute or until puffed and golden. Watch closely!
4. Add toasted marshmallows and vanilla nut extract to melted butter and stir to combine. Add cereal and toss to coat. Press into prepared pan. Allow to cool and cut into squares.
