I’m borderline obsessed with zucchini lately. So much so that Jordan said we need to grow some zucchini next year ;). I’ve been eating lots of zoodles and working my way through all those Pinterest zucchini recipes I mentioned earlier. I’m not going to lie, they haven’t all been tasty, however these flourless peanut butter zucchini brownies were delicious! I love peanut butter, but if you’re not a fan (or allergic), you could easily substitute your favorite nut butter (almond butter or hazelnut butter would be delicious!). These brownies are rich, fudgey, and very chocolatey – everything a brownie should be! And since they have zucchini – which is healthy – it’s totally fine to top them with big scoop of ice cream ;). Flourless Peanut Butter Zucchini Brownies
1 cup peanut butter (or your favorite nut butter)
1-1/2 cups shredded zucchini
1 egg
1/3 cup honey
1 tsp vanilla
1 tsp baking soda
1/2 cup cocoa powder (I used Hershey’s Special Dark)
1/2 tsp salt
1/2 cup semi-sweet chocolate chips
1. Preheat oven to 350 degrees. Spray 8 inch square baking dish with nonstick spray.
2. Combine all the ingredients into a large bowl and mix everything together.
3. Pour into prepared pan.
4. Bake for 35-40 minutes, or until center is set and edges are lightly browned.
