If you follow me on Instagram, you know I’m currently vacationing in sunny Florida. I had really good intentions to update the blog days ago, but I was too busy being a beachbum. Forgive me?? 😉 I hope you have a loaf of my honey wheat banana bread laying around or some bananas that are too brown to eat, because you’re going to want to give this french toast a try! I love french toast, but since I almost never have loaf bread on hand I don’t make it very often. Then, I came across several recipes using banana bread slices for french toast. I had a dozen (or so) brown bananas in my freezer, so I was totally on board with this concept. I was afraid that if I used a more traditional banana bread loaf it would end up being too sweet to top with syrup and so I decided to make a honey wheat banana bread instead. The honey wheat banana bread was delicious on it’s own but it really shines in this french toast! Banana bread french toast sounds so much fancier than plain french toast, but there’s nothing fancy about this recipe. It’s quick and easy – 5 minute prep time. You should definitely give this recipe a try! Enjoy!
Honey Wheat Banana Bread French Toast
4-5 slices (3/4 inch thick) honey wheat banana bread
2 eggs
2/3 cup buttermilk or milk
1/4 tsp cinnamon
1 tsp vanilla
dash of salt
1. Beat together egg, milk, cinnamon, salt, and vanilla.
2. Heat nonstick skillet or griddle over medium-high heat.
3. Dip each slice of bread in egg mixture, soaking both sides – about 10 seconds per side.
4. Place on preheated pan, and cook on both sides until golden. Serve hot.
