These oatmeal dulce de leche bars are dangerous…for your waistline! 😉 Dulce de leche + buttery, oatmeal crumb topping = perfection (or pretty close!). No fancy ingredients or techniques required. In fact, you probably have all the ingredients on hand – except maybe the dulce de leche. Maybe you’re like me though, and keep several cans on hand…you know, just in case ;). These bars are perfect for those times when you need a quick – but impressive – dessert. They’re a hit with kids and adults alike. A little goes a long way though, so be sure to cut them into small squares. I promise, you won’t need a big piece to feel satisfied =). An added bonus is that your house will smell amazing while these are baking. Enjoy!

Oatmeal Dulce De Leche Bars 
2 cups all-purpose flour
2 cups quick-cooking rolled oats
1 1/2 cups firmly packed brown sugar
1 tsp baking soda
1/2 tsp salt
1 cup butter, cold
12 oz dulce de leche
1/4 cup evaporated milk or cream

1. Heat oven to 350 degrees. Grease 13×9-inch pan. In large bowl, combine all crust ingredients; mix at low speed until crumbly. Reserve half of crumb mixture (about 3 cups) for topping. Press remaining crumb mixture in bottom of greased pan. Bake in preheated oven for 10 minutes.
2. Meanwhile, in small bowl, combine dulce de leche and evaporated milk; blend well.
3. Remove partially baked crust from oven. Drizzle evenly with dulce de leche mixture; sprinkle with reserved crumb mixture.
4. Return to oven; bake an additional 22-24 minutes or until golden brown. Cool completely. Cut into bars.
