I’ve expressed my unadulterated love of peanut butter a bazillion times here on the blog, so it was only a matter of time before these cookies made it to the blog – a reese’s peanut butter cup wrapped in peanut butter cookie…OMG! Okay, so maybe that was a little dramatic, but these are some of my favorite cookies ever…and I make (and eat!) a lot of cookies y’all ;). I’ve been craving these cookies for a while, but I just never got around to buying any reese’s cups. Luckily, Jordan got all kinds of reese’s cups for Christmas. Share and share alike, right? 😉 He was more than willing to share since he informed me these are still his all-time favorite cookies(!!). A few days later, we’ve nearly cleaned them up and he’s like, “Go make some more!”. Umm, maybe in a few days. I never make the same dessert two times in a row, not even peanut butter ones ;). Enjoy!
Peanut Butter Cup Cookies
1-1/4 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, at room temperature
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg
1 tsp vanilla extract
30-35 miniature Reese’s peanut butter cups, unwrapped
1. Preheat oven to 350 degrees. Spray miniature muffin tin with nonstick spray.
2. In a small bowl, whisk together the flour, baking soda and salt; set aside.
3. Beat together the butter, peanut butter and both sugars on medium speed until light and fluffy. Add the egg and vanilla and mix for another minute or so to combine. Reduce the mixer speed to low, add the dry ingredients, and mix until just combined. Chill dough for at least an hour.
4. Using a #60 scoop, portion dough into miniature muffin pan. Bake in preheated oven for 10 minutes or until light golden brown. Remove from oven and immediately press a miniature peanut butter cup in the middle of each cookie. Cool at least 10 minutes (or longer) before removing from the pan.
my birthday is friday and reese's peanut butter cups are my favorite candy. just saying. 🙂
