Every year, I used to make all my friends little Christmas gift bags with lots of different homemade goodies. Sometimes caramel corn would make the list. I wish I still had time to continue the tradition (just typing this makes me kind of miss undergrad ha!). Homemade gifts are the best! =) This caramel corn is very easy to make and super addictive! Hope everyone has a wonderful Christmas! I spent the morning making these rolled sugar cookies … yum! Merry Christmas Eve! Enjoy!

Caramel Corn
2-1/2 quarts popped popcorn (~9 cups)
1 cup brown sugar
1/4 cup molasses or honey
1 stick butter or margarine
1/4 tsp baking soda
1 tsp vanilla

1. Preheat oven to 250 degrees.
2. Combine brown sugar, molasses, and butter in sauce pan and bring to boil over medium heat. Boil for 5 minutes, stirring occasionally.
3. Remove from heat and add baking soda and vanilla. Pour over popcorn and stir to coat.
4. Pour onto greased or parchment lined baking sheet and bake for 1 hour, stirring every 15 minutes.
