If you’re looking for something easy – but phenomenal – to make for a special breakfast (or dessert!) this weekend, look no further! I have a soft spot for all breads, especially yeast breads, but yeast breads take time – which I don’t have a lot of anymore. Solution? Frozen dinner yeast rolls. I was skeptical at first, but I promise you won’t be disappointed. Of course homemade dough is (slightly) better, but this is a great substitute and sooo much easier! The only hard part about this recipe is waiting an hour or two for the dough to rise =). It’s like a gooey, caramel apple cinnamon roll. There’s nothing better than the way your house smells when this is baking – yum! And the caramel cream cheese glaze? It’s a-mazing and perfect for fall! Enjoy!

Easy, Caramel Apple Pull-Apart Bread
for the bread:
12 frozen dinner rolls, thawed slightly and cut into 1/4ths
3 tbsp melted butter
1/3 cup white sugar
1 tsp cinnamon
4 cups peeled and chopped apples

for the glaze:
1/3 cup caramel bits
1-2 tbsp water
1 oz neufchatel cheese, room temperature

1. Spray a loaf pan with non-stick spray. In a medium bowl, mix apples, cinnamon, sugar, and melted butter.
2. Place about a quarter of the roll pieces into the bottom of the loaf pan. Cover with a quarter of the apple mixture. Repeat until all ingredients are used up. Cover with plastic wrap and let rise until rolls have doubled in size (1-2 hours depending on how warm your kitchen is).
3. Preheat oven to 350 degrees. Place bread in preheated oven.Top will brown after about 20 minutes. Cover loosely and continue baking for 15-20 minutes more (total 35-40 minutes). Cool in pan about 5-10 minutes and then turn out onto serving platter.
4. In small bowl, combine caramel bits and water. Microwave in 30 second intervals until caramel bits are melted. Cool slightly. Add cream cheese to melted caramels. Stir to combine. Drizzle over warm bread.
