I’ve blogged several different peanut butter cookies in the past (Peanut Butter and Molasses Cookies, Peanut Butter Sandwich Cookies, Peanut Butter Toffee Cookies, and Peanut Butter and Honey Cookies) but what I realized was that I’d never blogged classic peanut butter cookies. Not sure how this happened but I set out to remedy this ASAP! =) There’s nothing fancy about this recipe but if you’re looking for a classic, chewy peanut butter cookie then look no further! These cookies were pretty much the perfect cookie in my opinion- crisp edges with a chewy center and lots of peanut butter flavor. Yum! Of course, I have a border-line unhealthy love of peanut butter…and cookies ;). The key to getting great cookies is chilling the dough. Don’t skip that step! Your cookies will spread too thin and won’t have a nice chewy center. I know waiting for the dough to chill is the hardest part but your patience will be rewarded =). Enjoy!
Peanut Butter Cookies
1/2 cup sugar (plus more for rolling, optional)
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1. Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients – flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture.
2. Wrap dough in plastic and refrigerate at least 3 hours.
3. Preheat oven to 375°F. Shape dough into 1-1/4 inch balls and roll in sugar (optional). Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 8 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
