Another brownie recipe?? Yeah, I know. I’ve been posting a lot of brownie recipes lately, but everyone likes blondies, right?? And when you add blueberries, almonds, and white chocolate chips, well, let’s just say you might want to go ahead and put on your stretchy pants ;). But after a long, hard day/week, there’s nothing better than decompressing in the kitchen baking up something sweet =). This recipe couldn’t be simpler – one bowl – and the blondies are not only delicious but they’re so pretty and colorful too! Be sure and bake until the top and edges are golden brown. Unlike regular brownies or blondies you want these to be completely set when you take them out of the oven because the berries add a fair amount of moisture. Enjoy!
Blueberry White Chocolate Almond Blondies
1/2 cup butter, melted
1 cup sugar
1/4 tsp salt
1 large egg
1 tsp vanilla extract
1/2 tsp almond extract
1 cup + 1 tbsp all purpose flour
1/2 cup sliced almonds
1/2 cup white chocolate chips
1 cup fresh blueberries
1. Preheat oven to 350F. Spray 9 inch square pan with non-stick spray.
2. In a large bowl, whisk together butter and sugar until well-combined. Beat in salt, egg, vanilla and almond extracts until well combined.
3. Stir in flour and mix until no streaks of dry ingredients remain. Stir in almonds and chocolate chips. Gently fold in blueberries until they are evenly distributed.
4. Transfer dough to prepared baking dish and spread carefully into an even layer.
5. Bake for about 35-40 minutes, until bars are set and golden. Cool completely in the pan before slicing.
