Step 2 CS is over – yay! =) One more exam – Step 2 CK – and I’m gonna be partying it up. Or maybe just camping at the lake and hanging out. Either way ;). Last Saturday, I launched a full-on stress baking marathon – starting with these Strawberry Shortcake Pancakes and ending with these cookies. I happen to love peanut butter. If I ever develop a peanut allergy, just go ahead and put me down…haha! Maybe not, but I would be very sad. I know peanut butter isn’t really a figure friendly food but I don’t care. I eat peanut butter almost every day. It’s worth it. And when it’s mixed with chocolate or honey it’s definitely worth it! I had a craving for peanut butter cookies but wanted to stray from my regular recipe and make some with honey. And then I decided to use spelt flour because y’all know how I like to get on kicks =). The result? The perfect blend of peanut butter and honey with a nice chewy texture. If I’d had honey roasted peanuts, I would have definitely thrown some in (and I definitely will next time!). If you’re a peanut butter lover, you’ll want to try this recipe. Enjoy!

Peanut Butter and Honey Cookies with Spelt Flour
1/4 cup butter, room temperature
1/2 cup peanut butter
1/2 cup honey
1/2 cup brown sugar
1 egg
1 1/2 cups spelt flour (or white whole wheat)
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup chopped honey roasted peanuts (optional)
1. In a bowl, mix butter, peanut butter and honey. Add egg; mix well.
2. Combine flour, sugar, baking soda, baking powder and salt; add to peanut butter mixture and mix well. Fold in peanuts. Refrigerate at least a couple hours or overnight.
3. Scoop chilled dough using a #60 scoop. Place on ungreased baking sheets. Flatten with a fork. Bake at 350° for 7-8 minutes. Yield: 3 dozen.

I cannot find my peanut butter cookie recipe 🙁 I may have to give these a whirl! They look yummy… although I have an unhealthy obsession with peanut butter.
