It seems that now matter how many bananas I buy, it’s always one too many. Last time I only bought two and somehow one still managed to get overripe. When they get too ripe I toss them in the freezer. And that’s how I wound up with 10 frozen bananas =). My freezer was full; something had to give. Sometimes I make them into banana bread, but I just wasn’t in the mood. It was a smoothie kind of day. The only other frozen fruit I had was blueberries so that’s how it became blueberry banana, but you could use any fruit you had on hand–strawberries and raspberries are some of my favorites. I like my smoothies to be thick, almost like a milkshake and that’s why I add the crushed ice, but if you wanted a thinner smoothie just use less ice and more juice. I only have a food processor and an immersion blender, but I really hate to wash all the pieces of my food processor, so sometimes if I’m just making one smoothie I’ll use my immersion blender. It will not blend ice cubes though, so I just turn the fridge on crushed–success! A tasty (and healthy) dessert or breakfast. Enjoy!
Blueberry Banana Smoothie
2 oz frozen blueberries
1 frozen banana, thawed slightly and roughly chopped
1/2 cup crushed ice or 4-5 cubes
4 oz yogurt (I used low-fat blueberry)
2 tbsp fruit juice (I used V8 Concord Grape Raspberry)
Combine in blender and pulse until smooth.
