I came home the other day completely exhausted but really wanting some fresh cookies. I had gone through the candy bowl a couple days before and found a pack of Butterfinger candy bars, and I thought cookies would be the perfect way to use them up (since I don’t really like Butterfingers and Jordan rarely eats them). I took a basic, chewy sugar cookie recipe and folded chopped Butterfinger candy bars into them…..all I can say is DELICIOUS! =) The Butterfinger pieces provided the perfect little crunch. These cookies couldn’t be easier with only 6 ingredients, so even when you’re completely beat you can still whip up these cookies for dessert. And they’re a pretty good snack when you come home from your first night on call. I was at the hospital for almost 30 hours and am definitely not used to getting my sleep in 2 hour increments, but I learned a lot and survived so yay! Enjoy!

Butterfinger Cookies
1 stick softened butter
1 cup white sugar
1 egg
2 tsp vanilla
2 cups self-rising flour
8 fun-sized Butterfinger candy bars, chopped

Beat butter and sugar together until light and fluffy. Add egg and vanilla and mix well. Gradually add flour and mix just until combined. Fold in candy pieces. Drop by rounded teaspoon fulls (I use a  #60 size scoop so they’re all the same size) on lightly greased cookie sheets. Bake at 350 degrees for 9 minutes. Cool on wire racks.
