As I was cleaning out my freezer, I found a Costco size bag of cod that needed to be ate. A quick google search led me to this recipe and it was a winner (with a few minor tweaks)! I’ve made it 3 times already, so I decided it was time to post it here on the blog. I was honestly surprised at how good it was. The ingredient list is simple and unassuming, but when it comes together magic happens! So if you’re like me and always trying to add more fish to your diet, add this recipe to your menu! Enjoy!
Lemon Garlic Baked Cod
2 Tbsp butter (room temperature)
1 Tbsp olive oil
1/4 tsp garlic powder
1/8 tsp paprika
1/8 tsp salt
1 Tbsp finely chopped parsley (or dried)
2 large or 4 small cod filets
1 fresh lemon
1. Preheat the oven to 400ºF. Spray baking dish with nonstick spray.
2. In a small bowl, combine the butter, olive oil, garlic, paprika, salt, and chopped parsley. Stir until it forms a fairly smooth paste.
3. Add the cod filets to the dish and then top the fish with the butter mixture.
4. Slice half of the lemon and add the lemon slices to the baking dish with the fish. Cut the remaining 1/2 lemon into wedges for serving.
5. Bake the cod for 20 minutes, or until it flakes easily with a fork and the internal temperature reaches 145ºF. Serve the cod immediately with the remaining fresh lemon wedges for squeezing juice over top.
