I realize it’s been almost a month since I posted anything here on the blog. Life just got crazy and somehow time got away from me, but I’m back with a bang! I’m usually a from-scratch baker but I’m not above using a cake mix now and then, so when I spotted this recipe on Pinterest I knew I had to give it a try. And it was ridiculous…ridiculously good! And so easy too. Like SO easy. It was a big hit with my taste testers. I made it twice within one week – partly so I could take photos and partly just because it’s that good y’all! Perfect for those holiday gatherings when you want to take something delicious but have so little time to do #allthethings. Shortcut for the win – and no one will know! Enjoy!

Ridiculous Chocolate Bundt Cake

for the cake:
1 (15.25 ounce) box chocolate cake mix
1 (3.9 ounce) box instant chocolate pudding
1 (16 ounce) container sour cream
3 eggs
1/3 cup vegetable oil
1/2 cup water
1-1/2 cups semi-sweet chocolate chips

for the frosting:
1/4 cup butter, room temperature
1/4 cup unsweetened cocoa powder
2 cups powdered sugar
1 teaspoon vanilla
1/4 cup heavy cream
additional 1/4-1/2 cup chocolate chips for garnish

1. Preheat oven to 350°F. Spray 10 inch bundt pan with nonstick spray and set aside.
2. In bowl of stand mixer with paddle attachment, combine cake mix, pudding mix, sour cream, water, oil, and eggs. Mix on low speed until combined. Beat on medium speed for 1 minute. Stir in the chocolate chips and pour the batter into the prepared pan.
3. Bake in preheated oven for 55-60 minutes, or until a toothpick inserted into the center of cake comes out with only a few moist crumbs. Remove cake from oven and allow to cool in pan for 10 minutes before inverting onto serving plate. Cool completely before frosting.
4. In the bowl of your stand mixer with the paddle attachment on low speed beat the butter, cocoa powder and powdered sugar until combined. Add in the vanilla and cream and beat on medium speed for 1-2 minutes until creamy, scraping the sides of the bowl as necessary.
5. Frost the top of the cake and garnish with more chocolate chips if desired.
