I’ve been in a bit of a dinner rut lately. The few times that I’ve made something new, it’s been too hectic to take any pictures/even think about blogging #lifewithababy. I made these kebabs with every intention of blogging them, but then right when they were coming off the grill Titus decided he wanted his dinner (per the usual lol). So I snapped a quick photo – no time for food styling – but then they were SO GOOD that I decided to blog them anyway! Sooo much flavor (and flavors that I don’t usually associate with ground beef but trust)!! These aren’t just another boring ground beef dish, y’all. Serve with some pita bread and tzatziki sauce or over a big greek salad. Step out of your comfort zone and give these a try. Enjoy!

Grilled Ground Beef Kebabs (Kofta)

1 lb lean ground beef
1/4 cup plain Greek yogurt
1 egg white
1/2 tbsp chopped dried cilantro
1/2 tbsp chopped dried  parsley
1 tsp dried minced onion
3 garlic gloves, minced
1 tbsp roasted ground coriander
1 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp allspice
1/2 tsp salt
1/4 tsp ground black pepper
5 bamboo skewers, soaked in water for 30 minutes

1. Combine all ingredients (ground beef through ground black pepper) in a large bowl. Mix until thoroughly combined.
2. Separate the mixture into 5 portions (~4 ounces each).
3. Roll each into a log about 1.5 inches thick and 5-6 inches long. Insert a skewer through each log. Place on a baking sheet or cutting board and refrigerate for 30 minutes (this part is important to ensure the meat holds together when they are grilled).
4. Heat grill to medium-high heat. Grill the kebabs for 3-4 minutes on first side and then flip and grill for an additional 3 minutes, making sure to watch them as to not overcook. Remove from grill and serve immediately with tzatiki.
