I’ve been on a dairy elimination diet for a couple weeks now (Titus has a sensitive little tummy), and let me tell you dairy is in EVERYTHING! Who knew?! I’ve really only missed two things though – cheese and chocolate! So I set out to make some dairy-free brownies! I found lots of recipes using coconut oil, but I didn’t have any coconut oil on hand. I kept looking and found this recipe using vegetable oil. I was worried that without butter, the flavor would be lacking. I’m happy to report this was not the case – at all! These were actually some of the best brownies I’ve ever made! If you love chewy and fudgy box mix-style brownies, this is the recipe for you! If you aren’t dairy-free, top them with a scoop of vanilla ice cream. Yum! Enjoy!
Chewy Fudgy Brownies
1/2 cup vegetable oil
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder (I used Hershey’s Special Dark)
1/4 teaspoon baking powder
1/4 teaspoon salt
1. Preheat oven to 350 degrees F. Spray 9 inch baking pan with nonstick spray (I used glass).
2. In a medium bowl, whisk together the oil, sugar, eggs, and vanilla until smooth.
3. Add flour, cocoa, baking powder, and salt. Stir until well blended. Spread the batter evenly into the prepared pan.
4. Bake for 20 minutes or until the brownie edges appear set and begin to pull away from edges of pan. (The center will not be set but will firm up when cool!) Remove from oven and cool completely before cutting into squares.
