This is barely a “recipe” but so delicious that I thought it was worth sharing. Oftentimes the simplest recipes/food is the best. Am I right?? 😉 I love roasting vegetables because it gives them soooo much flavor! (And it’s so easy!) You could even throw these in a grill basket if you didn’t want to heat up your kitchen! Don’t cheat and skip the fresh basil. It really takes them to the next level! I even enjoyed the leftovers the next morning in an egg wrap with some wilted spinach! #yum Give these roasted tomatoes a try and let me know what you think! Enjoy!
Roasted Tomatoes
4 pints cherry tomatoes
olive oil
salt
freshly ground black pepper
20 fresh basil leaves, chopped or julienned
1. Preheat the oven to 400 degrees F.
2. Toss the tomatoes lightly with olive oil on a sheet pan. Spread them out into one layer and sprinkle generously with salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.
3. Transfer the tomatoes to a serving platter and sprinkle with basil leaves. Serve hot or at room temperature.
