Because we all need another cauliflower rice recipe, right?? 😉 I know, I know. Cauliflower rice recipes have taken the internet by storm lately. I’m a huge fan, and when I spotted the cauliflower “rice” at Trader Joe’s I couldn’t resist. I decided to go the Mexican route this time, and it turned out even better than I hoped! All the spicy flavor I love, without all the carbs and calories! #winning You can dial the heat up or down, depending on your preferences. If you remove the seeds and ribs from the jalapeno it will be only mildly spicy – perfect for kiddos or spice-wimps ;). I can usually find riced cauliflower at my local Wal-mart, Kroger, and Trader Joe’s but I’ve also included how to make your own using a food processor (and a head of cauliflower, of course). No excuses. Easy, peasy. =) Enjoy!

Mexican Cauliflower Rice

1 pound cauliflower rice
1/2 tbsp olive oil
1 jalapeno, chopped (seeds and ribs removed)
1/2 cup chopped onion
1/2 tsp garlic powder
1/4 tsp ground black pepper
1/2 tsp cumin
1/2 tsp paprika
2 tbsp tomato paste
1/4 cup chopped fresh cilantro, plus more for garnish
dash cayenne
salt

1. Heat oil in large nonstick skillet over medium-high heat. Add onion and jalapeno. Saute for a couple minutes. Add the garlic powder, black pepper, cumin, and paprika. Cook for another minute.
2. Add the cauliflower and stir. Season generously with salt. Allow to cook another 2-3 minutes.
3. Add the tomato paste, fresh cilantro and dash of cayenne. Cook for another 1-2 minutes, then taste and adjust seasonings to taste. Garnish with additional cilantro.
Notes: If you can’t find pre-prepped cauliflower “rice”, you can easily make your own in the food processor. Just take cauliflower florets and pulse until it looks like rice!
