I’ve made these pancakes no less than 6 times! Yes, they are THAT good! They are everything I love about breakfast: healthy, quick and easy, protein-packed, low(ish) carb, very filling, satisfying, and (most importantly) tasty! I call them 3-ingredient pancakes even though you’ll see there are 5 ingredients listed…but baking powder and vanilla don’t count. Okay?! 😉 Even with 5 ingredients, these pancakes are just about as easy as it gets. Toss everything in the blender and puree until smooth. Then, cook like you would any other pancake. So easy! Give them a try and let me know what you think! Enjoy!
3-Ingredient Healthy Sweet Potato Pancakes
1 small sweet potato, baked and skin removed* (~1/2 cup)
1 tbsp low-fat buttermilk (or milk of choice)
2 egg whites
1/8 tsp baking powder
1/2 tsp vanilla extract
1. Combine all ingredients in blender and puree until smooth. Add additional milk as necessary to achieve a “pancake batter consistency”.
2. Heat non-stick skillet over medium heat. Spray with nonstick spray. Pour batter into preheated skillet. Cook 1-2 minutes or until bubbles form on the top and edges appear dry. Flip and cook an additional minute. Serves 1.
Notes: I usually cook my sweet potato in the microwave, but you could cook your sweet potato in the oven or use leftover baked sweet potato. I find microwaved sweet potatoes to be a little drier, so you may need another splash of milk. The recipe is very forgiving. I like to serve mine with blueberries and a generous amount of almond butter.
