I’ve made these pancakes no less than 6 times! Yes, they are THAT good! They are everything I love about breakfast: healthy, quick and easy, protein-packed, low(ish) carb, very filling, satisfying, and (most importantly) tasty! I call them 3-ingredient pancakes even though you’ll see there are 5 ingredients listed…but baking powder and vanilla don’t count. Okay?! 😉 Even with 5 ingredients, these pancakes are just about as easy as it gets. Toss everything in the blender and puree until smooth. Then, cook like you would any other pancake. So easy! 3-Ingredient Healthy Sweet Potato Pancakes
1 small sweet potato, baked and skin removed* (~1/2 cup)
1 tbsp low-fat buttermilk (or milk of choice)
2 egg whites
1/8 tsp baking powder
1/2 tsp vanilla extract
1. Combine all ingredients in blender and puree until smooth. Add additional milk as necessary to achieve a “pancake batter consistency”.
2. Heat non-stick skillet over medium heat. Spray with nonstick spray. Pour batter into preheated skillet. Cook 1-2 minutes or until bubbles form on the top and edges appear dry. Flip and cook an additional minute. Serves 1.
Notes: I usually cook my sweet potato in the microwave, but you could cook your sweet potato in the oven or use leftover baked sweet potato. I find microwaved sweet potatoes to be a little drier, so you may need another splash of milk. The recipe is very forgiving. I like to serve mine with blueberries and a generous amount of almond butter.
