This was the second meal from my FreshRealm delivery last week, and it was another winner! It was a perfect weeknight meal, since there was only minimal cooking required and leftovers make a great lunch. This “recipe” is barely even a recipe at all! In fact, you can easily adapt it to your tastes and/or whatever you have on hand. That’s the beauty of bowl-meals, right? Toss everything in a bowl and call it dinner =). BBQ Chicken Quinoa Bowls
1/2 cup red quinoa, uncooked
1/2 cup frozen (thawed) or fresh corn*
1/2 cup black beans, rinsed and drained
2 small boneless skinless chicken breasts, uncooked (~12 ounces total)
3-4 tbsp shredded cheddar cheese
2 tbsp BBQ sauce
2 scallions, chopped (optional)
1 avocado, chopped
1/4 chopped fresh cilantro
1 tsp olive oil
salt
pepper
1. Preheat oven to 425 degrees. Place chicken breasts on baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 15-20 minutes or until chicken is cooked through. Remove from oven and let cool slightly. Shred with two forks. Set aside.
2. While chicken is baking, cook quinoa according to package directions.
3. In large bowl, combine cooked quinoa, shredded chicken, black beans, and corn. Toss to combine.
4. Top with bbq sauce, cilantro, chopped avocado, cheese, and scallions. Serves 2.
Note: I like Trader Joe’s fire-roasted frozen corn.
