First off, I (obviously) don’t follow a paleo diet. At all. But these Paleo Chocolate Chunk Cookies by Ambitious Kitchen kept popping up everywhere – facebook, instagram, snapchat, etc – with rave reviews, so I finally bought some coconut sugar and gave them a try! Turns out they are really, really good! Now, let’s be honest. They aren’t as good as a classic Chocolate Chip Cookie, but they’re perfect for those times when you have to wear a swimsuit in a week but you still want to eat a cookie. Or maybe you just love trying new ingredients and twists on classic recipes like chocolate chip cookies? Either way ;). Enjoy!

Paleo Chocolate Chunk Cookies

1 egg
1 tsp vanilla extract
1/4 cup coconut oil, melted and cooled
1/2 cup coconut sugar
1 cup almond flour
1/4 cup coconut flour
1/2 tsp baking soda
3 oz 70-80% dark chocolate, coarsely chopped
coarse sea salt, for sprinkling

1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
2. In large bowl, whisk together egg, coconut oil, coconut sugar, and vanilla until smooth. Stir in almond flour, coconut flour, and baking soda until fully combined.
3. Fold in chocolate chunks. Using a 1-1/2 tbsp scoop, place dough onto prepared baking sheet. Flatten slightly with your hand or the back of a spoon.
4. Bake in preheated oven for 11-13 minutes or until edges are lightly browned. Remove from oven and sprinkle with coarse sea salt. Allow to cool slightly on baking sheet before transferring to wire rack to cool completely. Makes 15 cookies.
