I had some cherries left after I made my Baked Black Forest Oatmeal, so I decided to use the rest for this Cherry Almond Crisp. Crisps are the perfect dessert for those times you want something sweet, but don’t want to spend all day baking or dirty every dish in the kitchen. They’re always crowd-pleasers too! I love all fruit crisps, but the combination of cherry and almond is especially delicious. I like to serve mine warm with a big scoop of vanilla bean ice cream. So good! If you can’t find fresh cherries, you can use frozen. (I actually prefer frozen because then I don’t have to pit them! haha) Enjoy!
Cherry Almond Crisp
for the cherries:
1-1/2 lbs cherries, pitted (fresh or frozen)
1 tbsp granulated sugar
2 tsp all-purpose flour
1 tsp vanilla extract
1/4 tsp cinnamon
for the crisp:
1/2 cup old fashioned oats
1/4-1/3 cup light brown sugar (depending how sweet your cherries are)
1/4 cup all-purpose flour
1/4 cup cold butter, cut into cubes
1/4 cup sliced almonds
1/4 tsp almond extract
1. Spray 9 inch baking dish with nonstick spray. Preheat oven to 375 degrees.
2. Toss cherries, sugar, flour, vanilla, and cinnamon until combined. Pour into baking dish.
3. In mixing bowl, combine oats, sugar, flour, and almonds. Stir until combined. Add butter and almond extract. Using pastry cutter or two knife, cut butter into oat mixture until crumbly.
4. Sprinkle evenly over cherry mixture. Bake in preheated oven for 30 minutes or until bubbly and golden brown.
