I don’t eat many avocados. In fact, up until a few days ago I can’t remember the last time I bought one. I’ve had some bad avocado experiences in the past, but at Jordan’s urging decided to give avocados another chance. Turns out, they aren’t so bad after all. In fact, I kind of liked them =). I bought two avocados to start with and when they were finally ripe (which took days!), I made this spicy avocado dressing. Of course, I’m obsessed with spicy food…and cilantro so there’s that, but it really was good! I made a simple salad with romaine, black beans, fresh corn, chopped avocado, and this dressing and it was delicious. Besides being tasty, it’s healthy too! If you’re on the fence about avocado, you should give this dressing a try. Enjoy!

Jalapeno Avocado Dressing

3/4 cup low-fat buttermilk
1 jalapeno (I left the seeds but remove for less heat.)
1/4 cup of fresh cilantro
1 medium avocado
1/8 tsp garlic powder
2 tbsp lime juice
1/8 tsp cumin
1/4 tsp fresh ground pepper
1/4 tsp salt

Combine ingredients in blender or food processor until smooth. Add more buttermilk to adjust consistency. I added a couple tablespoons extra.
