I picked up some ciabatta rolls as I was breaking rule number 1 – never go to the grocery store hungry ;). We ate a couple of them with a salad for dinner that night, and then the next day I made us these sandwiches for lunch (using some leftover chicken from the night before). Jordan and I aren’t typically huge sandwich fans, but the flavor combination of the orange marmalade, chicken, provolone, and crusty ciabatta really works! I paired our sandwiches with a side salad and it was the perfect summer (or anytime) lunch. Orange Chicken Ciabatta Sandwiches

4 multigrain ciabatta rolls (I used dinner roll size, 57 grams and 150 calories each. Mine were parbaked.)
4 slices reduced fat provolone cheese
~8 oz cooked chicken breast, sliced
~1/4 cup orange marmalade (or apricot jam)
baby kale, optional

1. Preheat oven to 375 degrees. Split rolls in half and place on baking sheet.
2. Top each half with ~1/2 tablespoon of orange marmalade. (I thought 1/2 tbsp was perfect. Jordan thought they needed a bit more.) Place sliced chicken on top of jam.
3. Cut cheese slices in half and place on top of chicken. Bake in preheated oven for 10-12 minutes or until rolls are crusty and cheese is melted. Remove from oven and place a few leaves of baby kale on one side of each sandwich, if desired.

Nutritional Info (per sandwich): 318 calories; 7.1 g fat; 42.7 g carbohydrates; 3.3 g fiber; 22.5 g protein.
