In the last few years I’ve really developed a taste for yogurt, and the yogurt in the Netherlands was extra tasty! I had something very similar to this on the food tour (How I Ate My Way Through Amsterdam). I loved it so much that I decided to try and make my own version. You can use this recipe as a starting point and then make it your own. That’s what I love about parfaits, smoothies, etc – you can use whatever you like/have on hand (and you really don’t even have to measure). Because you’re probably like me and rarely (if ever) have time to make a recipe for breakfast that requires actual measuring. I’m usually rushing to get a protein smoothie made before I head out the door in the morning (and wondering why I thought it was a good idea to hit snooze a second time haha). Blueberry Chia Parfait
1/2 cup plain greek yogurt (I used Fage 2%)
1/2 tbsp chia seeds
1 tsp honey (or agave, mango syrup, etc)
~1/4 cup fresh blueberries (or desired fruit)
1 tbsp sliced almonds
1. In small bowl, mix yogurt and chia seeds. Place about half the blueberries in the bottom of desired serving dish. Top with yogurt chia mixture.
2. Drizzle yogurt mixture with honey. Top with remaining blueberries and almonds. Serves 1.
