These pictures don’t do this frosting justice! It’s cream cheese frosting loaded with toasted coconut and almonds. What’s not to love?? You might be tempted to skip toasting the almonds and coconut but don’t! Toasting adds so much delicious flavor! You can use this frosting on top of almost any flavor of cake or cupcakes. I used mine on a chocolate cake mix doctored up with coconut milk (THIS recipe minus the flaked coconut). It was a delicious combo! Of course, it would be delicious on coconut cake or chocolate cupcakes or by the spoonful 😉 (don’t ask me how I know!). Give it a try and let me know what you think! Enjoy!

Coconut Almond Cream Cheese Frosting

1/2 cup butter, room temperature
8 oz cream cheese, cold
4 cups powdered sugar
1 tsp vanilla
1/2 tsp coconut extract
1-1/4 cups sweetened shredded coconut, toasted
1 cup sliced almonds, toasted

1. In bowl of stand mixer with paddle attachment, combine butter and cream cheese. Gradually beat in powdered sugar until smooth. Add in vanilla and coconut extract and beat until light and fluffy, about a minute.
2. Stir in coconut and almonds. Spread on desired cake. Makes enough to frost a 9 inch layer cake.
