This chicken is certainly far from an original recipe, however it is a recipe that I have made countless times because it’s healthy, delicious, and easy! Winner winner chicken dinner! =) This recipe puts a healthier spin on Hellman’s original recipe for Parmesan Crusted Chicken by using greek yogurt in place of the mayo. In the past I’ve made the original recipe with (light) mayo and I can honestly say that both versions are equally delicious. I love it when healthy tastes good!

This recipe literally takes 5 minutes to prepare and can be on the table in 30 minutes. If you’re really in a hurry, you could even use chicken tenders. I’ve done this before and it is just as tasty, but takes less than half the time to bake. If you haven’t tried this recipe before, what are you waiting for?? =) Enjoy!

Parmesan Crusted Chicken

1/2 cup plain fat-free or 2% greek yogurt
1/4 cup grated parmesan cheese
4 boneless, skinless chicken breast halves
4 tsp Italian seasoned dry bread crumbs

1. Preheat oven to 425°. Spray 9×13 baking dish (or baking sheet) with nonstick spray.
2. In small bowl, combine yogurt and cheese. Place chicken in prepared baking dish. Top with yogurt mixture, then sprinkle with bread crumbs.
3. Bake in preheated oven until chicken is thoroughly cooked, about 25-30 minutes. (Time may vary depending on the size/thickness of your chicken breasts. You want an internal temperature of 165 degrees.)
