Jordan got up early Saturday morning and asked if I was cooking anything for breakfast. We had pizza (rather late) Friday night and I was not hungry. At all. But it’s so rare that he actually gets up early enough to eat breakfast with me that I said, “Sure. What should I fix?”. He quickly replied, “How about chocolate chip waffles?”. I should have known he would request pancakes or waffles since they are some of his favorite breakfast foods. I asked if he could wait long enough for me to go run off some of my pizza before breakfast. Luckily, he agreed =). And a short 3 miles later, I was ready for more carbs…haha.
I decided not to go super healthy with these waffles because chocolate chip (!!) waffles, but I did use white whole wheat flour. So that’s something right? 😉 I further balanced out the chocolate with strawberries…obviously haha. A few cheat meals a week are necessary, in my opinion. Without them, I end up with my face in a bag of (half-stale!) mini oreos at 9 pm ;). These waffles would be a great way to prevent that from happening, and as far as cheat meals go they’re pretty healthy. Trust me. I’m a doctor ;). Enjoy!
Chocolate Chip Whole Wheat Waffles
3/4 cup + 2 tbsp white whole wheat flour
1 tsp baking powder
1/4 tsp salt
3/4 cup low-fat buttermilk
1/2 tbsp butter, melted
1 tsp vanilla extract
1 large egg yolk
1 large egg white
1/2 tbsp sugar
1/4 cup mini semisweet chocolate chips
1. Preheat waffle iron.
2. In large bowl, combine flour, baking powder, and salt. Whisk to combine. Add buttermilk, melted butter, vanilla, and egg yolk. Stir to combine.
3. In separate bowl, beat egg white and sugar until stiff peaks form (by hand or with mixer). Gently fold into flour mixture. Fold in chocolate chips.
4. Pour mixture onto preheated waffle iron by heaping 1/2 cupfuls. Cook until golden brown. Makes 3 waffles.
Nutritional Info (per waffle): 299 calories; 10 g fat; 46.5 g carbohydrates; 6 g fiber; 10.4 g protein.
