You guys know how much I love BBQ Hawaiian Pizza, so when the idea hit me to make a bbq hawaiian quesadilla I couldn’t resist. I took all the same ingredients that I used to top my BBQ Hawaiian Pizza and stuffed them between two tortillas….it was a good great idea y’all! I used bbq sauce, bacon, ham, pineapple, and mozzarella but you could easily switch up the ingredients to suit your tastes. Quesadillas are super versatile. You’ll notice I didn’t even include measurements for each ingredient. You don’t need ’em. Just use however much of each ingredient you like =).

Be sure and use a good quality bbq sauce (we like Bull’s Eye). It really does make a difference.  I used some leftover ham that I had in the freezer, but canadian bacon is delicious too. Use whatever you have on hand. These quesadillas make a delicious lunch or party snack. I hear there’s a big football game tomorrow ;). These would be a great last minute addition to your party menu. BBQ Hawaiian Quesadillas

large flour tortillas
bbq sauce
pineapple chunks or tidbits
shredded mozzarella cheese
cooked bacon, crumbled
ham or canadian bacon, cut into pieces

1. Preheat nonstick skillet over medium heat. Place one tortillas in dry skillet. Spread with thin layer of bbq sauce. Sprinkle pineapple, bacon, ham, and cheese over bbq sauce. Top with second tortilla.
2. Cook until bottom lightly browned. Flip and continue to cook until cheese is melted and second side is browned.
